Inspired seafood

Recently I checked in to one of the many sailing sites that I follow and have been amazed at how well this particular crew eats while under way.  While sailing across the Atlantic they hooked and landed a small Mahi which quickly found its way to the grill.  A little salt, pepper, and lemon juice and its quite the little feast.  For a side, they made some basmati rice cooked in garlic and coriander.

We decided to give it a try - unfortunately the Mahi in Colorado isn't quite as fresh but we were able to get some nice looking pieces which grilled up nice!  The rice was quite tasty and we added our own tried and true  roasted asperagus that my parents frequently make.  It was quite the delicious and simple meal -  Thanks for the inspiration Alex and Taru!

A few mights later Kate found a good price on scallops and picked up enough for the two of us for dinner.  Pan seared with lemon beurre blank - (a lot of butter with a touch of mined shallot, vermouth, and lemon juice) - it was spectacular!

Regan's Baptism

Last week Andrew and I flew to Seattle to celebrate Regan's Baptism.  We had a wonderful time with everyone and of course our little Regan was just precious.  She is such a good little girl and she and Andrew had a lot of fun playing together.











Can you say, pink pink everywhere?!  Elizabeth told me today that she likes pink and purple people (and she tells me everyday that her favorite colors are pink and purple) so she would have loved to play in Avery and Madeline's room!

Visit with Grandmom Bunny

I had the wonderful opportunity to visit with my grandmom a few weekends ago.  It was such a blessing to be able to spend some time with her, listen to all of her wonderful stories and enjoy her little place with so many treasures.




 It was also my mom's birthday and as you can see, she got two birthday cakes!  She is one loved lady!

Over the last couple years you have seen Elizabeth in the park down the street from our house but now that Andrew is fully mobile he is really starting to enjoy it too. 

 The cork-screw slide is a big hit and this show above is from his first time down all by his big boy self!  Of course his little corduroys sliding on the plastic slide in the dry winter means a big shock is waiting for whoever is catching him at the end but he didn't seem to mind
